Chop Shop Salads,a fast-casual restaurant that sells salads and wraps, is poised to open its third location in town.

The new 1,500-square-foot store is set to open in early June at 203 N. Hurstbourne Parkway, joining the other Chop Shop locations downtown at 436 W. Market St. and in St. Matthews at 126 Breckinridge Lane. 
Owner Brad Vetter  bought out his investment partner last August to become the sole owner of Chop Shop Salads. “It’s really exciting for me,” Vetter said of the opening of his third store. “I think it is going to be a great spot for our business because we are already drawing people from that area,” he said. “This is going to be able to serve them better.”
Plus, the surrounding area has a high concentration of white-collar workers, Vetter said. He finds that those are the people who tend to eat out for lunch.
Eventually, Vetter said, he would like to own two or three more Chop Shop Salads locations in Louisville and to franchise the business in other cities.
And, plans are under way for Feast BBQ, which has made a big splash in New Albany, to open a second location in the former Cake Flour location,  909 East Market Street in NuLu.
Feast BBQ owner and chef Ryan Rogers would not confirm when the restaurant would open. We are keeping an eye on his Fcebook page to see how the new location is progressing.
