Breakfast options downtown are increasing rapidly, especially with the opening of Wild Eggs’ fourth Louisville location.
But to support new restaurants serving breakfast downtown, Louisville diners might need a culture change that sees us eating our morning meals out more often.
That there are just a few daily, downtown breakfast mainstays in Wild Eggs’ standalone independent restaurant league (Toast On Market, Main Street Café, The Café and Dish On Market) reflects that. Perhaps in the early going, supply could exceed demand, but Wild Eggs’ cofounder and CEO, J.D. Rothberg doesn’t think so.
“We’re confident downtown’s going to be a great location for us,” he said. In two weeks, the brand will open its first Lexington restaurant, its fifth in Kentucky. “We can do good business there.”
Blu Italian Grille recently modified its Sunday brunch option by adding a Homegrown Table to its multi-station, multi-offering layout to give its live jazz brunch more local appeal.
